Effects of Nisin Treatment on the Shelf Life of Ready-to-Eat Roasted Shrimp (Penaeus vannamei)

Abstract: The microbiological, biochemical, and physicochemical changes of ready-to-eat shrimps (Penaeus vannamei) with high water content, subjected to nisin treatment in combination of hurdle technology, were investigated. The ready-to-eat shrimps were processed by boiling, drying, treatment with nisin solution, seasoning, and roasting, followed by vacuum packaging, sterilization, and storage at room temperature (25°C). The results showed that the samples treated with nisin in combination with other hurdles resulted in a significant decrease in bacterial counts (Bacillus cereus and native microflora) compared to the control samples. Additionally, the nisin-treated samples possessed better biochemical and physicochemical properties, as well as better sensory patterns. According to the safety guidelines for roasted shrimp (SC/T 3305-2003), the shelf life of ready-to-eat shrimp with 48–53% moisture content was extended by nisin application at concentrations of 60 and 100 mg/kg of nisin; specifically, ready-to-eat shrimp maintained good quality from 4–6 days up to 6–12 and 8–14 days corresponding to 60 and 100 mg/kg of nisin treatments, respectively. Nisin treatment combined with hurdle technology in the production of ready-to-eat shrimp provides a highly valued product in China.

Abstract: A study was conducted with the objective to identify adaptable and chemical composition of Lablab varieties. Three Lablab Beresa-17, Gabis-55 and Local variety +were tested in randomized complete block design (RCBD) with three replications. The result revealed that date of maturity was significantly (p<0.05) differ between the tested treatments. Among the tested varieties Gabis-55 was took longer day (144 days) while, the local varieties required the short (129.2 days) to reach for seed maturity. Fresh biomass yield, seed yield, plant height, pod per plant and pod length were not significantly (p>0.05) differ among the tested varieties. The analyzed chemical compositions indicated, Beresa-17 variety had the highest in Organic matter (OM), crude protein (CP), neutral detergent fiber (NDF) and dry matter (DM) and less in acid detergent fiber (ADF), acid detergent lignin (ADL), and total ash content (TASH) content while, Gabis-55 was highest in acid detergent lignin (ADL) and acid detergent fiber (ADF) and less in crude protein (CP) content. The local variety had the highest in neutral detergent fiber (NDF) and total ash content (TASH) and less in dry matter (DM) content than the rest varieties. The result of this study implied that Gabis-55 variety was adapted and being productive regarding the plant height, biomass yield and seed yield of each variety, which is hopeful to fill the gap of low quantity feed. In addition to the nutritional values were promising particularly the crude protein (CP), Dry matter (DM) and Organic Matter (OM) content in Beresa-17 variety. Based on its adaptability, high biomass yield, high seed yield, good CP, DM and OM of Gais -55 is recommended for further promotion in the midland of East Guji zone.

Abstract: This study is carried out on five varieties of mangoes exploited in Senegal (village of Kaguitt), two of which are intended for export and the three for local consumption on the one hand and national marketing on the other. The objectives of this study were to identify the varieties richest in antioxidants and to understand whether the position of the fruit (mango) harvest has an influence on its antioxidant levels. To carry out this study, we used the method developed by (Georgé et al., 2005) for the determination of polyphenols and the method of Adaramola et al. (2016) for evaluation of antioxidant activity. The results on the variation in antioxidant activity, total polyphenols and flavonoids show an influence of variety and position. However, the variation of these contents is difficult to observe at first sight. From statistical analyses, we can see that the position and variety effects are dependent, i.e. that these levels vary according to the two parameters. Compared to the antioxidant activity content, the Sl (top position) and Knt (middle position) varieties are respectively the richest 50%inhibition and 40%inhibition. For the polyphenolic composition this variation according to position has not much effect, however the varieties Dr and Bk remain the richest 0.6 mgeqAc/100g and 0.5 mgeqAc/100g. The results on the flavonoid content show that the Intermediate position of the Dr variety (11 mgeqAc/100g) contains by far the most flavonoids than the other positions of the other varieties. However, its flavonoid content is not statistically significant compared to the Intermediate position of the variety SL. This study reveals that the SL, Dr and Knt varieties can be the basis of an antioxidant-rich diet in Senegal. They can also be used in several food areas.
